It's June, so it's only fitting that we plan a special menu for the important men in our lives. Most men want to eat “manly” – in other words, no “sissy” foods wanted here! For this year's Father's Day Picnic, I've created a dish guaranteed to make the most “manly man” smile with pleasure.
Zesty Pasta Ham Salad
1 cup fat-free mayonnaise
1/4 cup grated fat-free Parmesan cheese
1/4 cup fat-free milk
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
4 cups cold, cooked rotini pasta, rinsed
and drained
2 full cups extra-lean diced ham
1 1/2 cups cherry tomatoes, halved
1 cup chopped green bell pepper
1/2 cup chopped onion
In a large bowl, combine mayonnaise, Parmesan cheese, milk, black pepper and parsley. Add rotini pasta, ham, tomatoes, green pepper and onion. Mix gently to combine. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving. Serves 8 (1 cup each).
Each serving equals: 191 calories, 3 g fat, 12 g protein, 29 g carb., 688 mg sodium, 2 g fiber. Diabetic exchanges: 1 1/2 starch, 1 meat, 1 vegetable.
