After a long day of pampering, enjoy this healthful and nutritious salad you can put together ahead of time. Store-bought grilled chicken and assorted packaged greens and fruit cut down on prep time. Keep chilled until serving time and finish with a creamy, low-fat curried dressing. Accompany with your favorite low-fat muffin or multi-grain bread.
8 oz. cubed (1/2”) Jarlsberg Lite cheese
6-1/2 cups cut up fruits such as mango, peaches, raspberries, radishes, green onions, etc.
5 cups 1/2” slices romaine lettuce
5 cups mesclun or spring mix salad
1/2 pound grilled chicken
Layer salad ingredients on serving plates or carefully mix in a large bowl. Top with dressing and grilled chicken to serve.
1 cup nonfat plain yogurt
2 tablespoons lowfat milk
2 tablespoons apricot jam (or to taste)
2 teaspoons curry powder (more or less to taste)
1 teaspoon pressed or finely minced garlic
salt and/or pepper to taste
Whisk all together and store in fridge.
