Shiro of Japan hires new head chef

Chef Nobuyoki Ogura will bring his talents in creating authentic Japanese cuisine to Shiro of Japan, which has a location at Carle Place on Long Island and one in The Shops at Atlas Park in Glendale, as the new head chef.
“We are very pleased to have a talented and creative new chef at Shiro of Japan,” said co-owner Hiro Ishikawa. “Chef Ogura enjoys using traditional ingredients and approaches to provide customers with authentic Japanese dining experiences they look for.”
Ogura gained a great deal of experience working with master chefs in Japan. He also perfected his skills while studying chefs in New York City and on Long Island.
“While Asian fusion cuisine is popular, at Shiro we believe that it is important to focus on what makes Japanese dining special. Chef Ogura understands our customers and pays attention to what they enjoy,” Ishikawa said. “His followers and our clientele are quickly embracing his style of cooking. Using his skills, talent and experience, he will offer daily specials and create a spectacular dining experience in our private and traditional Japanese tatami rooms.”
Ogura’s signature meals are Kaiseki. These are multiple courses that are prepared using fresh ingredients and employing tradition techniques. Ogura is also one of the few chefs in the United States who has been licensed to prepare fugu, a type of blowfish considered an exotic delicacy, by the Japanese government.
“Preparation of Japanese cuisine, unlike fusion cuisine, involves complex cooking techniques designed to bring out subtle flavors of food and making each dish of a multiple course meal enjoyable,” Ogura said. “By combining spices and seasonal ingredients, the true flavors of the foods come out and never overpower each other.”
